Ingredients:
1 cup egg beaters
1/2 cup whole wheat flour
1/2 cup fat-free milk
2 tablespoons cooking oil
1/2 teaspoon salt
your favorite fruit
Coat six large muffin tins with cooking spray.
Beat egg beaters, flour, milk, oil, and salt until smooth. Divide batter among prepared pans.
Bake at 400 degrees for 25 minutes or until brown and puffy. Turn off oven and let stand in oven for 5 minutes.
To serve, immediately after removing from the oven transfer to plates and spoon fruit over the center of the pancake.
